For a party that we catered recently in the local area, Hog Roast Littleborough was asked to cook our Southern Slow Roast Menu for 50 guests. From the five marinated meat dishes on offer, Julie selected the three of Texan beef brisket, Cajun-spiced whole roasted chickens and fall off the bone Louisiana sticky pork ribs, to be accompanied by several lovely sauces. In terms of side dishes, Julie asked us to make our zesty Memphis coleslaw, corn cobettes with butter, our scrumptious all-American mac and cheese and spicy sweet potato wedges. She also needed a vegetarian option and with this menu that’s our veggie skewers which are always a big hit. 

On the day of the party at Julie’s home, we set up in the back garden a few hours before we would be serving and started roasting the marinated meats. Some hours later and we could start preparing the sides, sauces and bread rolls that we serve too, as well as grilling the halloumi and vegetable skewers. As the wonderful meaty smells filled the air around us, the guests began to arrive, and before long we were dishing up some homemade goodness and satisfying the guests’ hunger.
